PEPPER STEAK CABALLERO 
1 1/2 lbs. sirloin steak, cut into strips
1 tbsp. paprika
1 clove garlic
2 tbsp. butter
1 c. sliced green onions (with tops)
2 lg. tomatoes, diced
2 green pepper, cut into strips
1 c. beef broth (bouillon)
1/4 c. water
2 tbsp. cornstarch
2 tbsp. soy sauce

Sprinkle steak with paprika and allow to stand while preparing other ingredients. Cook steak in butter along with garlic until browned. Add onions and peppers; continue cooking until vegetables are wilted. Add tomatoes and broth. Cover and simmer about 30 minutes. Blend water, cornstarch, and soy sauce. Stir into steak and cook until thickened. Serve over beds of rice. Serves 6.
