OATMEAL RAISIN MUFFINS 
1 c. buttermilk
1 c. rolled oats, quick or regular
1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
2 tbsp. wheat germ
1/4 c. brown sugar
1 egg
1/2 c. raisins
1 c. flour; half whole wheat, half white
1/2 tsp. baking soda
1/3 c. butter, softened
2 tbsp. honey

In a small bowl, combine buttermilk, oats, and raisins. Stir and set aside. In another bowl, combine and beat butter and sugar. Beat in honey and egg. Add the flour, soda, baking powder, salt, wheat germ, and oat mixture. Stir. Bake at 400 degrees for 25-30 minutes. 12 muffins.
