ZESTY ZUCCHINI CASSEROLE 
1 c. brown rice
2 2/3 c. water
1 tsp. salt
1 tbsp. oil
4 med. zucchini, sliced
3 med. tomatoes, sliced
1 lb. Jack cheese, grated
1 (4 oz.) can chopped green chiles
1 tbsp. parsley
2 tbsp. green pepper
2 tbsp. green onion
1 tsp. oregano
1 tsp. fresh or garlic salt
1/2 tsp. pepper
2 c. sour cream

Spread cooked rice in 13 x 9 inch pyrex baking dish. Cover with zucchinis and 1/2 cheese. (Mix all vegetables (above) and sour cream together with seasonings.) Place sliced tomatoes over cheese and pour over the sour cream mixture. Top with other half of the cheese. Bake 30 minutes at 350 degrees.
