AMERICAN FAVORITE--CHICKEN SALAD 
1 3/4 c. cubed cooked chicken
1 c. diagonally sliced celery
1 sm. onion, minced
Juice of 1 lemon
1 sm. can mandarin oranges, drained
1/2 c. slivered almonds
12 sliced pimento-stuffed olives
1 c. seedless grapes, halved
Mayonnaise
Salt

Combine chicken, celery and onion in a bowl. Sprinkle lemon juice over mixture. Season to taste. Toss gently to mix ingredients. Chill in refrigerator about 1 hour.

When ready to serve, add almonds, olives, grapes, and mandarin oranges. Gently toss with enough mayonnaise to moisten ingredients. Serve salad on crisp greens.

NOTE: If desired, substitute cooked turkey for chicken. Use toasted pecans instead of almonds. Mix sour cream with some of the mayonnaise.
