CHICKEN SALAD 
3 c. chicken (or turkey), cooked and diced
1 c. celery, chopped
1 avocado, chopped
2 tbsp. lemon juice
1/2 sm. onion, minced
1 tsp. salt
1/2 c. real mayonnaise
1 c. seedless green grapes, halved
1 seedless orange, chopped
1/2 c. toasted almonds, slivered
Lettuce

Combine chicken, celery, avocado and onion. Sprinkle with salt and lemon juice. Toss to coat. Place in a small bowl, cover tightly with plastic wrap and refrigerate until well chilled. Remove from refrigerator; add mayonnaise and toss. Add the grapes, oranges and almonds and toss gently to coat. Line a salad bowl with lettuce leaves. Place chicken mixture in the bowl and serve immediately.
