CITRUS CHICKEN SALAD 
1/4 c. mayonnaise
1/4 c. low-fat yogurt
1 tbsp. lemon juice
3/4 lb. chicken breast, cooked, torn into bite-size pieces
1/2 c. chopped celery
1 1/2 c. mandarin oranges, drained
2 tbsp. chopped walnuts for garnish

Blend mayonnaise, yogurt and lemon juice. Chill then add chicken, celery and oranges. Fold gently. Garnish with nuts at serving.
