WHIPPED SWEET POTATOES | |
4 sweet potatoes (2 1/4 lbs.) 1/2 c. melted butter 1/4 c. brandy 2 tbsp. brown sugar 2 tbsp. slivered pecans, chopped (optional) Fresh ground nutmeg to taste Boil potatoes until soft (20-30 minutes). Drain until cool to touch, then peel. Mix (in blender or food processor) until smooth all ingredients except pecans. After blended, return to saucepan and heat on low (3-5 minutes) until piping hot, stirring constantly. Spoon into serving dish. Top with pecans. |
