OATMEAL BREAD 
1 1/2 c. boiling water
1 1/2 tsp. salt
1 1/2 c. rolled oats (not instant)
1/3 c. brown sugar
1 tbsp. shortening
1 pkg. dry yeast
1/4 c. lukewarm water
3 to 3 1/4 c. flour

Put oats and salt in large bowl. Pour boiling water over oats and stir. Add brown sugar and shortening. Stir again and cool until warm.

In small bowl, put lukewarm water and sprinkle yeast on top. Let set at least 5 minutes to dissolve yeast. Stir and add to cooled oat mixture.

Stir in flour - first with a spoon, then with hand. Dough will be sticky. Knead well on floured board.

Place in greased bowl. Cover and let rise until double (about 1 1/2 hours). Punch down. Shape into loaf and place in 9x5x3 loaf pan or 2 small loaf pans.

Let rise until double (about 1 hour). Bake at 375 degrees using center oven rack 35-40 minutes or until brown.
