NOODLE PUDDING 
1 tsp. salt
1 (12 oz.) pkg. egg noodles, boiled 6 minutes
1 (8 oz.) container sour cream (or low-fat yogurt)
1 (16 oz.) container light cottage cheese
1/4 c. orange juice
1 can pineapple tidbits or 2 grated apples
1/4 c. chopped nuts
2 tbsp. cinnamon sugar mix
1 tbsp. vanilla
4 eggs (or 1 box Egg Beaters)
1 c. raisins
1 1/2 c. sugar
1/4 c. butter

Boil and drain noodles. Mix with 1/4 cup butter and set aside. Beat eggs with sugar; add cottage cheese, juice, sour cream, fruit, marmalade, vanilla, and raisins. Add all to noodles; turn into greased 9 x 13 inch pan. Bake 1 hour at 350 degrees or until knife in center comes out clean. Sprinkle with cinnamon, sugar, and chopped nuts mix. Let stand 15 minutes before cutting. Serve warm or cold. Freezes beautifully.
