PATTA 
3 lbs. ground pork
1 lb. ground pork liver
2 level tbsp. salt
1 heaping tsp. pepper
2 cloves garlic
4 1/2 c. water
1 level tsp. thyme

Mix meat, seasoning and water with a potato masher. Put in 350 degree oven and cook for 1 hour. Mix with potato masher, cook for another hour, mix then cook 1/2 hour without stirring. Can be made with veal and veal bone for gelatin.
