CHEWY CAKE MIX COOKIES 
1 pkg. cake mix (chocolate, yellow, or butter brickle are good choices)
1/3 c. vegetable oil
1 tsp. vanilla
2 eggs
1 (6 oz.) chocolate or butterscotch chips
1/2 c. chopped nuts

Heat oven to 375 degrees. Mix about half of the cake mix, the vegetable oil, vanilla, and eggs in large bowl until smooth. Stir in remaining cake mix, chips, and nuts. Drop dough by teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 8-10 minutes (centers will be soft). Cool slightly; remove from cookie sheet. About 5 dozen cookies.

These cookies are delicious! Always a big hit. The only negative I have is that the dough is extremely thick...even my Kitchenaid stand mixer can't combine the ingredients. I let it do most of the work and then have to mix the rest by hand. I wasn't sure how the cookies would turn out with such thick dough but they're awesome!
