COCONUT MACAROONS 
1/2 cup egg whites (about 4)
1/4 teaspoon salt
1-1/4 cups sugar
1/2 teaspoon vanilla extract
3 cups flaked coconut

In a mixing bowl, beat egg whites and salt until soft peaks form. Gradually add sugar, beating until stiff peaks form, about 6 minutes. Beat in vanilla. Fold in coconut. Drop by rounded teaspoonfuls 2-inches apart onto lightly greased baking sheets.

Bake at 325°F for 20 minutes or until firm to the touch. Remove to wire racks to cool.

Yield: 5 dozen.
