GLUTEN FREE SUGAR FREE COCONUT
MACAROONS
 
6 egg whites
1/4 tsp. salt
1 tbsp. vanilla extract
3 cups shredded unsweetened coconut
1/4 tsp. liquid stevia

In mixing bowl combine salt, vanilla, and egg whites and beat with electric mixer until firm, fluffy peaks form.

Gently fold in coconut and stevia.

On baking sheet lined with parchment paper, drop rounded spoonfuls of coconut and pinch slightly at the top to form a peak.

Bake at 350°F for 10-15 minutes or until golden brown.

While I love stevia as a substitute for sugar, it is NOT a good thing to put in any baked or heated recipe as it gets bitter with heat! I prefer to splurge a little and use real sugar. Especially at Passover time when we should celebrate!! Otherwise this is a great recipe! :)

It is a sugar free recipe! so if your a diabetic you have to use a sugar substitute. If you want to use real sugar find a new recipe....

I would recommend Splenda for baking instead of stevia or sugar in this recipe. However, coconut is Not sugar-free. You can make meringue cookies for Passover. If you want to use coconut, be sure that it is unsweetened. This can be very difficult to find. I get mine at Winco.

Unsweetened coconut is also made by Bob's Red Mill and can be found in most local grocery store's such as Cub. Most stores are carrying more and more gluten-free, sugar-free products for those of us who deal with wheat/gluten alleries
