GUAMANIAN WEDDING CAKE 
1 1/2 c. flour
3/4 oil
1 c. sugar
1 c. grated carrots
1 c. walnuts, chopped
1 c. prunes (pitted & chopped) (Raisins may be substituted for prunes)
1 tsp. vanilla
1 tsp. baking soda
1 tsp. baking powder
2 eggs, beaten
1/2 tsp. salt

Mix dry ingredients with oil and beaten eggs; stir in remaining ingredients. Bake in moderate oven, 350 degrees for 1 hour. Frost with powdered sugar, grated lemon rind and juice frosting.
