1 med. onion, diced
1 lb. sausage, ground
6 eggs, blended
3 tbsp. sour cream
5 oz. salsa (Mexican)
8 oz. Cheddar cheese
8 oz. mozzarella cheese
8 oz. Velveeta cheese

Grate Cheddar and mozzarella cheese. Saute sausage, mushroom and onions, salt and pepper to taste. Drain and set aside.

Combine eggs and sour cream; beat well. Grease 9 x 12 inch baking dish. Add eggs and place in 400 degree oven until eggs set (few minutes). Remove from oven and spoon hot sauce. Add sausage, mushrooms and onion mixture. Top with cheeses. Put under broiler until cheese melts. May be made night before. Heat 45 minutes in 300 degree oven.
