EGGS FANTASTIC | |
1/2 lb. bulk sausage 1/4 lb. fresh mushrooms, chopped 1/2 med. onion, chopped Salt and pepper to taste 6 eggs 3 tbsp. sour cream 4 tsp. med. hot sauce 4 oz. each grated Mozzarella, cheddar and pasteurized process cheese Heat oven to 400 degrees. Grease 13x9x2-inch pan or glass dish. In large skillet combine crumbled sausage, chopped mushrooms and chopped onion. Saute over medium heat until sausage is completely cooked. Season to taste with salt and pepper; drain well. Combine eggs and sour cream in blender and whip 1 minute. Turn into baking dish and bake 4-7 minutes or until eggs are softly set. Spoon hot sauce evenly over tops of eggs. Add sausage mixture and top with cheese. To serve immediately, broil until cheese is melted. To serve the next day, cover and refrigerate until serving time, then bake at 325 degrees for 30 minutes. NOTE: Do not be tempted to omit the hot sauce. It really makes the flavors come out, but doesn't make it spicy hot. This dish was a big hit in our house on Christmas morn (and I got to play with the kids) ! |
