12 oz. regular Jimmy Dean sausage
1/4 lb. fresh mushrooms, chopped
1 med. onion, chopped
6 eggs
3 tbsp. sour cream
1/2 c. medium salsa
8 oz. Velveeta, sliced
8 oz. cheddar, sliced
8 oz. Mozzarella, sliced

Saute sausage, mushrooms and onions until brown. Drain very well on paper towels. Combine eggs and sour cream. Pour into a greased 7 1/2" x 11 1/2" baking dish. Bake at 400 degrees for 8 to 10 minutes until set in the middle. Spoon salsa over eggs, top with sausage mixture. Layer the three cheeses on top, beginning with the Velveeta. This may be refrigerated at this point.

Bake, uncovered at 300 degrees for 45 minutes. Let sit 5 to 10 minutes before cutting. Serves 6.
