EGGS FANTASTIC 
12 oz. pkg. sausage
1 4/ lb. sliced mushrooms
1 med. onion, chopped
6 eggs
3 tbsp. sour cream
1/3 to 1/2 c. salsa
8 oz. sliced Velveeta cheese
8 oz. med. Cheddar
8 oz. Mozzarella cheese

Saute sausage, mushrooms, onion and salt and pepper to taste. Drain very well on paper towels. Combine eggs and sour cream in blender for 1 minute. Pour into greased 7 1/2 x 11 1/2 inch baking dish. Bake in 400 degrees oven until set in middle, 8-10 minutes. Spoon salsa over top.

Add sausage mixture over eggs. Add a layer of Velveeta, then Cheddar cheese and top with Mozzarella. At this point, casserole may be refrigerated or frozen. Bake uncovered at 300 degrees for 45 minutes. Let stand 5-10 minutes before cutting and serving. Serves 6-8.
