ITALIAN EGGS 
1 lb. bulk Italian sausage
1/2 red onion (med. - must be red)
1 can mushrooms, drained & chopped
2 med. red tomatoes, peeled & chopped
8 oz. grated Mozzarella
1 tsp. seasoned salt
1 doz. eggs
Salt & pepper to taste

Brown sausage and drain. Saute onions and mushrooms. Beat eggs and add all ingredients. Pour into a greased 9 x 13 inch pan. Bake 30 to 40 minutes in 400 degree oven. Serve hot. 12 servings. Good with English or bran muffins.
