OREGON CARROT CAKE 
2 c. flour
1 1/2 c. sugar
2 tsp. baking powder
2 tsp. baking soda
2 tsp. cinnamon
1 1/2 c. oil
3 c. grated carrots
4 eggs
1/2 c. chopped nuts

Mix all ingredients and pour into sheet cake pan. Bake at 350 degrees for 45 minutes. When cooled, frost with cream cheese frosting and top with nuts.

FROSTING:

1 lg. pkg. cream cheese
2 1/2 c. powdered sugar
2 tbsp. milk
1 tsp. vanilla

Mix until smooth.
