OREGON CRAB CASSEROLE 
1/4 c. butter
4 tbsp. flour
1 c. evaporated milk
1/3 c. water

Make white sauce of above ingredients.

1/2 tsp. Beau Monde
1/2 tsp. Italian herbs
1 c. thinly diced celery
1 tbsp. green pepper, chopped
2 tbsp. pimiento (red pepper)
1 lb. fresh crab
2 hard-boiled eggs
1/3 c. toasted slivered almonds

Blend crab, seasonings, vegetables, egg, and almonds; add white sauce. Place in large casserole dish which has been buttered, and bake at 350 degrees for 35 minutes.

Top with 1/2 cup buttered bread crumbs and 1/2 cup shredded Cheddar cheese. Return to oven and melt cheese topping.
