SUMMER SQUASH 
1 to 2 garlic cloves
1 sweet onion, cut up
8 oz. fresh mushrooms, cut up
1 zucchini
1 yellow summer squash
1 spaghetti squash
Parmesan cheese

Prepare spaghetti squash by cutting it open and scraping out seeds. Place olive oil inside squash and bake at 375°F for about 1 hour or until tender. Then scrape out the "spaghetti".

Place a little olive oil in pan. Using a garlic press put in garlic and cut up onions and cook until brown. Smells so good! Cut up yellow summer and green zucchini into thin circle slices. Add to mixture of onion and garlic and cook until vegetable is soft. In a separate pan sauté cut up mushrooms, cook and then drain. Add mushrooms to above mixture.

Place on top of spaghetti squash and add a little Parmesan cheese. It can be a vegetable or meal.

Variation: Instead of spaghetti squash, fettuccine noodles can used for a quicker meal.
