FRIED SUMMER SQUASH 
2 or 3 sm. summer squash, sliced about 1/4 inch thick
2 eggs, slightly beaten
1 c. milk
1/2 c. flour
1 tsp. salt
Oil for frying

Combine eggs, milk, flour and salt in a small bowl, beating well. Dip each slice of squash in batter and fry in frying pan until brown turning and brown both sides. Serve hot.

It was good but need to add a little pepper to it. You can also add other spiced depending on how spicy you like them. Simple and easy to follow. It was my first time ever making it and it came out great. :)

I used this recipe BUT changed it just a little. I added a package of the Lipton Dry Soup Mix (Savory Herb and Garlic) to my flour mixture. Delicious!!!

...first time making squash of any kind. ...and although the batter didn't stick, I like it. (I'd appreciate any pointers on getting the batter to stick on the squash as opposed to the pan. :-)

I've prepared and enjoyed fried summer squash for many years = a recipe handed down from my mother. In order for the batter to stick to the squash and not the pan, I dip the squash in the egg mixture (no milk), then the flour and back in the egg mixture before frying them. ymmmmm

Instead of adding salt, try adding some bacon! To get the batter to stick better, let the squash slices sit for awhile. Put some paper towel on a plate and put the slices on that, then set it in the refrigerator for a few minutes. You might also pat the slices with a paper towel.
