CRAB QUICHE 
1 c. crabmeat
3 lg. eggs
1 c. half & half
2 tsp. Dijon mustard
1/4 tsp. seasoned salt (optional)
1 c. (4 oz.) shredded Monterey Jack cheese
2 tbsp. green onions in 1/8 inch slices
1 tbsp. red pepper, diced
1 (9 inch) pie shell (ready to bake)

Beat eggs in a large bowl. Blend in half & half, mustard, and salt. Stir in crabmeat, cheese, green onions, and red pepper. Pour into pie shell. Bake at 350 degrees for 35 to 45 minutes or until the center is set. Cool 10 minutes and cut into wedges. Makes 8 servings.
