FINNISH STRAWBERRY CAKE | |
5 eggs, separated 3/4 c. sugar 3 c. crushed strawberries 1 c. cookie crumbs 1 tsp. almond extract Whipped cream Beat egg yolks until light; add sugar. Beat until mixture is stiff and lemon colored. Drain strawberries; stir into egg mixture. Add crumbs and almond extract. Beat egg whites until stiff peaks form; fold into strawberry mixture. Pour mixture into buttered 8x12 inch baking dish. Bake at 350 degrees for 35 minutes. Serve with whipped cream. |
