FINNISH "YULE" BREAD | |
3-4 c. reg. flour 2 c. whole wheat flour 3 c. dark rye flour 2 pkgs. dry yeast 2 tbsp. sugar 1 tbsp. salt 3 c. water (warm) 1/2 c. dark (blackstrap) molasses 1/2 c. cooking oil 1 c. light golden raisins 1 tsp. anise seed 1 tsp. caraway seed 2 c. (cooked) mashed potatoes Combine in large bowl water, molasses, yeast, mashed potatoes, oil, salt, sugar, raisins, anise seed, caraway seed and flour. Keep mixing and kneading, adding flour as needed to keep dough soft and pliable. Bake at 375 degrees for about 35-40 minutes until when tapped loaves sound hollow. Makes about 3 loaves. |
