NISUA (FINNISH COFFEE BREAD) 
1 egg, beaten
3/4 tsp. ground cardamon
4 tbsp. sugar-honey
4 tbsp. butter
1 1/2 tsp. salt
1 c. milk, scalded
1 tbsp. yeast
1/4 c. lukewarm water
4 c. pastry flour, sifted

Activate yeast in warm water; add pinch of salt. Place sugar, butter, and salt in bowl; add scalded milk. Mix thoroughly; cool to luke warm. Stir activated yeast into sugar mix. Add cardamon and 2 cups flour. Then 1/2 cup of flour at a time of remaining cups. Mix will be stiff. Mix in cuisinart until sticky or knead on board (floured). Turn into greased bowl; cover with plastic wrap and allow to rise in a warm place for 1 hour. Pull out and punch down, allow to rest for 10 minutes. Divide dough into 4 strips and braid (see below). Place on cookie sheet and raise in warm place or warm oven (turn off heat during rising) 1 to 1 1/4 hours. Bake at 350 degrees for 20 to 25 minutes. Check after 15 to 20 minutes prior to baking brush with beaten egg and sprinkle sugar on top.
