QUESADILLA CASSEROLE 
Great for parties!

1 1/2 lb. ground beef, turkey or chicken
1/2 onion, chopped
1 (10 oz.) can Rotel tomatoes
1 (15 oz.) can whole kernel corn, drained
1 (15 oz.) can black beans, drained
1 (8 oz.) can tomato sauce
1 (4 oz.) can green chilies
1 tsp. cumin
2 tsp. chili powder
salt and pepper, to taste
9 flour tortillas
2 1/2 cups cheddar jack cheese

Brown meat and add chopped onion until soft. Add Rotel, corn, black beans, tomato sauce, and chiles. Season with cumin, chili powder and salt & pepper. Bring to a boil for 10 minutes.

In 9x13-inch dish lay 3 tortillas in the bottom of the dish. Top with 1/3 meat mixture and cheese. Repeat layers, finishing with cheese.

Bake at 350°F for 25 minutes. Serve with dairy sour cream, guacamole, and salsa.
