APPLE CAKE 
4 c. apples (peeled and diced) Use Granny Smith, Cortland or Ida Reds
2 eggs, beat and pour over apples
1 c. sugar
2 1/4 c. flour
2 tsp. baking soda
1/4 tsp. salt
2 tsp. cinnamon
3/4 c. oil
1 c. chopped nuts
1 c. raisins
1 c. semi sweet chocolate chips

Beat eggs and pour over apples, set aside. Sift together sugar, flour, soda, salt, cinnamon. Add oil to the sifted ingredients. Add egg and apple mixture. Then add nuts, raisins, and chocolate chips. Stirring with as few strokes as possible. Bake at 325 degrees for 25 to 30 minutes. Use cupcake papers in the muffin pans.
