APPLE NUT CAKE | |
1 1/2 c. oil 1 1/2 c. sugar 1/2 c. firmly packed light brown sugar 3 eggs 2 c. all purpose flour 2 tsp. cinnamon 1 tsp. baking soda 1/2 tsp. ground nutmeg 1/2 tsp. salt 3 1/2 c. peeled tart apples (about 4 med. and 1 lg. cut in large dice) 1 c. coarsely chopped walnuts 2 tsp. vanilla 1/2 c. chocolate chips Preheat oven to 325 degrees. Generously grease and flour 10 inch tube pan. Combine first three ingredients in large bowl and blend well. Add eggs, one at a time, beating well after each addition. Sift dry ingredients. Add first mixture, blend thoroughly. Fold in remaining ingredients. Spread evenly. Bake until cake tests done, about 1 3/4 hours. Let cool 20 minutes in pan. Turn out on wire rack. Serve with whipped cream. |
