WILD BERRY MAPLE SYRUP MUFFINS 
1 1/2 c. flour
1/4 c. sugar
3 tsp. baking powder
1 egg
1/2 tsp. salt
1/3 c. oil
1/2 c. milk
1/2 c. maple syrup
3/4 c. quick-cooking rolled oats
1 c. fresh or frozen blueberries

In large bowl sift together flour, sugar, baking powder, and salt. Make a well in the center and add slightly beaten egg, cooking oil, milk, maple syrup and rolled oats. Stir to moistened.

Fold in blueberries. Fill greased muffin cups 2/3 full. Sprinkle top with sugar if desired. Bake in 350 degrees for 25 - 30 minutes. Makes 15 medium and 12 large muffins.
