BAKED WINTER SQUASH 
2 winter squash, such as Hubbard or acorn
2 tbsp. butter
2 tbsp. chopped onion
1/2 c. grated cheese
1/2 c. bread crumbs
Salt & pepper to taste

Wash squash. Make a slit in the squash to let the steam escape during cooking. Bake at 375 degrees for 1 to 1 1/2 hours or until inside is soft when pierced with a knife. When squash is done, cut in half and remove seeds and stringy parts. Scoop out some of the cooked squash. Mash the squash. Combine with butter, chopped onions, cheese, bread crumbs and seasonings. Fill shell with mixture. Bake in 350 degree oven for 15 to 20 minutes.
