MINI MEAT LOAVES | |
1 1/2 lbs. ground beef 1/2 tsp. salt 1 egg 1 (8 oz.) can tomato sauce 1/2 tsp. Durkee Italian seasoning 1 (2.8 oz.) can Durkee French fried onions 6 sm. red skin potatoes, sliced thin 1 (16 oz.) bag frozen broccoli, corn, red pepper combination, thawed & drained Combine meat, salt, egg, 1/2 can tomato sauce, Italian seasoning and 1/2 can French fried onions. In 9 x 13 inch baking dish, form 3 mini loaves. Place potatoes around loaves. Bake, covered at 375 degrees for 35 minutes. Place vegetables around loaves, stir to combine with the potatoes. Lightly season with salt & pepper. Top meat loaves with remaining tomato sauce. Bake, uncovered, 15 minutes. Top loaves with remaining onions, bake uncovered 5 minutes longer. Preparation time: 10 minutes. Makes 3 to 6 servings. Microwave Directions: Prepare meat and vegetables as above except place in 8 x 12 inch baking dish and place potatoes under and around meat loaves. Cook covered, on High 10 to 13 minutes; turn halfway through cooking time. Add vegetables and top meat with sauce. Cook, uncovered on High 1 minute. Let stand 5 minutes before serving. |
