M.'S NIGHTMARE | |
2 (28 oz.) cans crushed tomatoes 12 oz. tomato paste 10 oz. mushrooms, chopped 2 med. zucchini, sliced 1/4 inch thick 1 lg. onion, chopped 1 red pepper, chopped 1 green pepper, chopped 3 stalks celery 16 oz. ziti noodles 10 slices Mozzarella cheese 1 lb. lean ground beef 1 lb. sausage, cut into chunks 1 tbsp. olive oil 1/4 c. red wine 1 tsp. basil (2 tsp. if fresh) 1 tsp. oregano (2 tsp. if fresh) 1 tsp. rosemary (1 tsp. if fresh) 2 cloves garlic, minced Add oil to large Dutch oven and heat over medium heat. Add garlic and saute for 1 minute. Add beef and sausage and cook until meat loses pink color. Add onion, celery, zucchini, mushrooms, onions and peppers and saute for additional 5 minutes. Add crushed tomatoes, paste, wine, cover and simmer for 30 minutes (longer if desired to allow flavors to blend). Cook noodles according to package directions. Add herbs and cook for 15 minutes more to allow sauce to thicken. Layer slices of cheese on top of sauce and cover until melted. Ladle sauce with dripping cheese over noodles. |
