3 c. sifted flour
1 tsp. baking soda
1 tsp. cinnamon
2 c. sugar
1 tsp. salt
1 1/2 tsp. vanilla
3 eggs
2 c. diced ripe bananas (tastes better if they are not cut too fine, I cut my banana in quarters and then slice)
1 c. oil
1 (8 oz.) can crushed pineapple

Sift dry ingredients. Add bananas, oil, pineapple and juice, vanilla, and eggs to dry ingredients. Stir to blend. DO NOT BEAT!! Pour into greased angel food cake pan and bake at 350 degrees for 1 hour and 10 minutes. Serve plain or with ice cream or topping of your choice.
