FAMILY FAVORITE MEATLOAF 
1 egg
1/4 c. tomato juice
2 tbsp. Worcestershire sauce
1 tsp. salt
1 lb. ground beef
1 c. bread crumbs
1/2 c. lowfat cottage cheese
1/4 c. shredded carrots
1/4 c. fine chopped green pepper
Pinch of onion powder

Combine egg, juice, sauce and salt. Add beef and bread crumbs; mix lightly. Spread 1/2 of mixture in a shallow pan (sort of hollow out center). Pat firmly. Mix cottage cheese, carrots and pepper. Add onion powder. Spread this mix on first layer of meat in center hollow. Form other 1/2 of meat in a large pattie. Place on top and seal edges tightly as in a pie.

Bake at 350 degrees for 40-45 minutes or until browned well. If doubling recipe at 400 degrees for 1 hour. Serves 6 with 200 calories a serving.
