FAVORITE MEAT LOAF ROLL 
1 1/2 lbs. lean ground beef
1 tbsp. dried minced onion
2 eggs or 4 egg whites
1 sm. carrot, grated
1 sm. potato, grated
Seasoned salt to taste, if desired
1/2 c. catsup
1/4 c. packed brown sugar
1 1/2 tsp. mustard
15-18 slices thinly shaved ham
6-8 slices American cheese

Mix beef, onion, eggs, carrot, potato, and salt, if desired, in large bowl. In separate bowl, mix catsup, brown sugar and mustard. Pour 1/3 of catsup mixture into beef mixture. Mix.

On waxed paper, roll or press beef mixture into a 1/3 inch thick rectangle, approximately 10x16 inches. Spread half of shaved ham on top, overlapping slices and leaving 1 1/2 inch borders of beef on edges. Place cheese slices on top of ham, then cover with remaining ham slices. Carefully roll as you would a jelly roll. Seal the seam and ends.

Place in baking dish, preferably one from which the juices can drain. Top with the remaining 2/3 of catsup mixture. Bake at 350 degrees for 1 hour. Allow to "set" for 10 minutes after removing from oven.
