PASSOVER BROCCOLI CASSEROLE 
1 1/2 tbsp. butter
2 tbsp. potato starch
1/2 c. water (or milk)
1 1/2 tbsp. powdered onion soup
3 eggs, well beaten
2 lb. broccoli, cut up & cooked until tender
1/2 c. mayonnaise
Paprika

Prepare a white sauce from the butter, potato starch and water (or milk). Boil gently until thick. Take off heat, and add mayonnaise and onion soup. Add the well-beaten eggs. Drain the broccoli well and chop well. Mix all the ingredients (except the paprika) together. Grease a 3 quart casserole dish and add the mixture. Top with paprika. Bake at 350 degrees for 40 minutes or until firm.
