PEANUT BUTTER CHOCOLATE CHIP
COOKIES
 
1 c. flour
1 tsp. baking soda
1/4 tsp. salt
1/4 c. (1/2 stick) butter, softened
1/4 c. vegetable oil
1/2 c. sugar
1/2 c. firmly packed light brown sugar
1 egg
1/2 tsp. vanilla
1 c. creamy peanut butter
1/2 c. semisweet chocolate mini chips

Preheat oven to 350 degrees. On waxed paper, sift together the flour, baking soda and salt; set aside.

In large bowl of electric mixer, beat together the butter, oil, sugars, egg and vanilla until light and creamy. Blend in peanut butter; stir in chocolate chips.

Shape dough in 1 inch balls, place 1 inch apart on ungreased cookie sheets. With tines of fork, press criss-cross pattern of top of cookie (cookies should be about 1 3/4 inches in diameter). Bake 10 to 12 minutes or until edges are lightly browned (3 1/2 dozen).
