QUICHE LORRAINE 
1 (10 inch) pie shell, unbaked and chilled
1 tbsp. butter, softened
12 bacon slices, cooked and crumbled
4 eggs
2 c. heavy cream
3/4 tsp. salt
Pinch of nutmeg
Pinch of cayenne pepper
1/8 tsp. pepper
1 c. grated Swiss cheese

Preheat oven to 425 degrees. Rub butter over surface of pie shell. Beat eggs, cream and spices. Sprinkle pie shell with the bacon and cheese. Pour mixture in pie shell.

Bake at 425 degrees for 15 minutes. Reduce oven to 300 degrees and bake 40 minutes or until knife inserted in center comes out clean.
