QUICHE LORRAINE 
1 (8") unbaked pie shell
8 slices bacon
1 c. Swiss cheese, grated
3 eggs
1/2 c. heavy cream (or homogenized milk)
1/4 tsp. salt
Pinch pepper
1/8 tsp. nutmeg
2 tbsp. butter

Cut bacon into 1/2" pieces and brown. Drain on paper towels. Put in bottom of pie shell. Add cheese. Blend (do not beat) eggs, cream (or milk) and seasonings. Pour into shell. Dot top with bits of butter. Bake at 375 degrees for 35 to 40 minutes or until inserted knife comes out clean.
