OLD FASHIONED GINGERBREAD | |
1 1/2 c. flour 1 c. sugar 1 tsp. cinnamon 1/2 tsp. ginger 1/2 c. butter (very soft) 1 egg (slightly beaten) 2 tbsp. molasses 1 tsp. baking soda 1 c. buttermilk 1/2 c. applesauce Grease 8x8 inch pyrex with butter (very well). In large bowl combine flour, sugar, cinnamon and ginger. Use fingers and rub in butter. (Take out 1/2 cup of this and reserve for topping). Stir egg and molasses into the above mixture. Stir soda into buttermilk and add that, then stir in applesauce. Do not overmix - stir only until well mixed and do not use mixer. Sprinkle topping over all. Place in preheated 350 degree oven. Takes about 20-25 minutes. Test for doneness. (Very moist.) |
