SAUTEED SUMMER SQUASH | |
3 small summer squash (1 1/2-inch diameter) 2 medium onions (or 1 large) 1 green pepper 1/4 to 1/2 tsp. minced garlic celery seed cooking oil salt and pepper Cut squash into 1-inch cubes, leaving skin on. Slice onions, then cut green pepper into 1-inch chunks. Heat oil in frying pan over medium heat. Add squash, onions, green pepper, garlic, celery seed, salt, and pepper. Sauté, stirring occasionally. Can cover during cooking if you don't like the vegetables as crisp. Fry till desired firmness. Makes about 4 servings. Note: May add small amount of hot pepper or other seasonings if you wish.
