CHICKEN BREASTS WITH SPINACH
FILLING
 
Cook, drain and squeeze out by hand 1 package of frozen spinach.

Saute 2 tablespoons onion and 1 clove of chopped garlic in pan with 1 tablespoon of butter. Add spinach (which you have chopped), 7 or 8 chopped mushrooms and 1/4 cup of canned milk. Season with 1 teaspoon of basil and 1/4 teaspoon of thyme.

Place above ingredients on 4 chicken breasts that have been pounded thin. Roll up and secure with a toothpick. Lightly oil baking dish and place chicken breasts, seam side down, in dish. Pour 2 tablespoons melted butter and 2 teaspoons lemon juice (mixed together) over the chicken breasts. Sprinkle with paprika.

Cover with foil and bake in 350 degree oven for 25 minutes. After chicken has been baked, remove breasts and place in warm plate. Add 3/4 to 1 cup of sour cream to chicken drippings and stir. Pour this mixture over chicken breasts and serve.
