CHICKEN BREAST BAKED WITH HERBS
AND SPINACH
 
1 skinless, boneless chicken breast
2 sprigs fresh dill
1 whole scallion
2 tomato slices
4 spinach leaves, washed
Pepper to taste
Aluminum foil
Vegetable spray

Spray fry pan with vegetable spray. Quickly brown chicken breast on both sides. Prepare a square of foil large enough to hold the chicken. Place chicken in foil, top with dill, scallions, tomato and spinach. Sprinkle with pepper. Fold over to form a neat package. Seal edges tightly. Place in baking pan and bake at 350 degrees for 15 to 20 minutes. Serves 1.
