PINEAPPLE CHEESE CAKE 
16 oz. skim Ricotta
8 oz. crushed pineapple
1 (3 oz.) box lemon flavored gelatin
1 tbsp. honey
Graham cracker crust
Cornstarch

1. Dissolve gelatin in 1 cup of boiling water. Cool slightly.

2. In a mixing bowl combine Ricotta, honey and dissolve gelatin.

3. Pour into graham cracker crust. Chill until set.

4. Meanwhile combine cornstarch, water and pineapple. Cook until thick.

5. When pie is set, spread pineapple on it.
