ORANGE - NUT LOAF 
3/4 c. sugar
2 tbsp. soft shortening
1 egg
3/4 c. milk
3/4 c. orange juice
4 tsp. grated orange rind
3 c. sifted flour
3 1/2 tsp. baking powder
1 tsp. salt
3/4 c. chopped nuts

Mix the sugar, shortening and egg thoroughly. Stir in milk, juice and rind. (1 cup mashed banana may be substituted for the orange juice and rind. Increase sugar to 1 cup.) Sift together and stir in the flour, baking powder and salt. Blend in the nuts. Pour into well greased 9 x 5 inch loaf pan. Let stand about 20 minutes before baking. Bake about 70 minutes at 350 degrees, until toothpick in center comes out clean. Loaf will usually crack on top.
