APRICOT-ORANGE LOAF 
1 c. buttermilk
3/4 c. light brown sugar
3 tbsp. vegetable oil
1 tsp. grated orange zest
1/4 tsp. almond extract
1 1/2 c. flour
1 1/2 tsp. baking powder
2 c. diced dried apricots
2 egg whites
1 1/4 tsp. vanilla
1/2 tsp. salt
1 c. whole wheat flour
1 tsp. baking soda

Stir together buttermilk, apricots, sugar, egg whites, oil, vanilla, orange zest and almond extract. Let stand 5 minutes. Mix in dry ingredients just until moistened. Place in greased 9x5 loaf pan. Bake at 350 for 45-55 minutes. Cool on rack 20 minutes. 16 servings.
