BOB HOPE'S LEMON PIE 
1 c. + 2 tbsp. sugar
3 tbsp. cornstarch
1 c. boiling water
4 slightly beaten egg yolks
2 tbsp. butter
Grated rind of 1 lemon
4 tbsp. lemon juice
1/4 tsp. salt

Combine sugar and cornstarch in top of double boiler. Slowly add boiling water, stirring until thick. Gradually slightly beaten egg yolks, butter, lemon rind, lemon juice and salt, stirring for 2 or 3 minutes. Pour into a baked pie shell. Top with strips of pie crust or meringue.
