PUMPKIN MUFFINS 
1 1/2 c. flour
1/2 c. sugar
2 tsp. baking powder
1 tsp. cinnamon
1/2 tsp. ginger
1/4 tsp. cloves
1/2 c. raisins
1 egg, slightly beaten
1/2 c. milk
1/2 c. canned solid pumpkin or 1 to 1 1/2 fresh or frozen pumpkin
1/4 c. butter, melted
1/4 tbsp. cinnamon/sugar

Sift together first 6 ingredients into mixing bowl. Stir in raisins. Combine egg, milk, pumpkin and melted butter. Add wet ingredients all at once to sifted mixture. Mix only until combined.

Fill greased muffin pans 2/3 full; sprinkle with 2 1/2 teaspoon sugar mixed with 1/2 teaspoon cinnamon. Bake at 400 degrees for 20 to 25 minutes. Makes 1 dozen. Can add 1 to 2 tablespoons wheat germ.
